Sizzling Wild Boar
A variation of grilled pork. Sizzling Wild Boar makes use of wild boar meat in place of regular pork. Considered a wildgame meat, wild boar meat is clean and healthy (although more expensive) because wild boar eats only vegetables. The recipe can be substituted with domestic pig’s meat instead of wild boar if non is available.
Asado Beef
1 kg. beef, cut into desired, pieces
2 potatoes, pared and divided into 6
1 big onion, peeled and cut into cubes
1/2 head garlic
1 tsp. black pepper
1+1/2 cups native vinegar
2+1/2 tbsp. cooking oil
1 pc. bay leaf
1 tsp. salt
2 tbsp. soy sauce
2 small red/green peppers, cut into slices
2 tbsp. achuete juice
2 tomatoes, cut into
small pieces

Adobo Beef
1 kilo beef (cut into 2″ cubes)
1/2 cup vinegar
1/2 cup soy sauce
1 clove garlic, minced
1/4 tsp. salt
1 Tbsp. sugar
1/2 tsp. ground pepper
1 bay leaf
10 peppercorns
1/3 cup of cooking oil
Asado Pork
1 kilo pork chops or spareribs
2 tbsp. soy sauce
1/2 cup brown sugar (pack)
1 tbsp. salt
1 tbsp. peppercorns (whole)
1 cup water
1/2 pc bay leaf
5 cloves garlic, minced
1 petal star anise or sanque
4-5 pcs dried mushrooms (optional)
1 tsp. MSG
1/2 cup toasted cashew nuts
Beef Tapa with Atchara
1 kilo sirloin beef, sliced thin
2 tablespoons soy sauce
4 tablespoons salt
1+1/2 tablespoons sugar
4 cloves garlic, crushed
1/2 teaspoon pepper
