Bringhe
This dish is I think a Kapampangan version of the paella.
Ingredients:
1 head garlic, crushed
1 medium onion, chopped
Chorizo de Bilbao lard
1 chicken, cut in serving pieces
1 piece chorizo Bilbao, sliced
1/2 cup yellow ginger(turmeric)juice (about 2 pieces peeled and pounded)
1 cup malagkit rice, washed
1 cup rice, washed
4 cups thin coconut milk
1 bay leaf
patis
1 small can pimientos
2 hardboiled eggs, quartered
banana leaves
Beef Pata Paella
Paella is a Spanish dish. But Since the Philippines has been colonized for more than 300 years so many of our cooking has have a similarity with Spanish dishes like the paella.
Pork Meat Balls With Shrimp
Ingredients:
1/4 kilo ground pork
1/4 kilo shrimp, shelled and chopped fine
2 medium tomatoes, seeded and chopped
1 medium onion, minced
1 small singkamas or turnip, minced
1 teaspoon salt
1 egg
Oxtail Menudo
Ingredients:
1 kilo oxtail
2 tablespoons butter
1 head garlic, chopped
1 medium onion, chopped
1 piece red pepper, cubed
1 piece green pepper, cubed
1 cup Chorizo de Bilbao, diced
1 cup tomato sauce
1 cup cooked garbanzos
Salt and Pepper to taste
Adobong Antigo ( Chicken or Pork Adobo )
Ingredients:
1 kilo chicken or pork cut in serving pieces
1/4 cup vino blanco or 5 year old rum
4 teaspoons soy sauce
5 cloves garlic, crushed
2 teaspoons salt
1 teaspoon freshly ground pepper
1 cup vinegar
1 cup buko juice
1 small head garlic, crushed
